Rosedale Butchers has been a Vaux Family owned and operated business since 1977. In May 1977 Ray and Janet Vaux took over the business from Jack Budge. Ray and Janet took on their son Neville as an apprentice; they formed a successful shop and within years built a partnership between the three. 

It was in 1983 an extension was built onto the rear of the butcher shop and the first smokehouse was purchased in 1986. A second larger smokehouse was then bought in 1992. These same smokehouses are still used today which allow us to produce the quality product Rosedale Butchers has become known for.

Neville and his wife Debbie took over the business on 1st July 1995. Apprentice butcher Paul Wood continued with them, with the assistance (back up) of Ray and Janet. At this time only a small amount of smallgoods were being produced. Within several years, this increased substantially. During this time rules and regulations changed with regards to smallgoods making, with PrimeSafe taking over all butcher shop registrations (previously local council).

Times became tougher with increased paperwork and tougher rules and regulations. Now was the time to decide; do we forget about smallgoods manufacturing (life becoming easier) or “go with the flow” and continue with smallgoods making which had become a major part of our business. Yes we did decided on taking the hard road. Over time the rules and regulations continue to get tougher but we have weathered the storm!

In 2008 Neville and Debbie‘s son Matthew began his apprenticeship through William Angliss Institute of Tafe. Since successfully completing his apprenticeship in 2012 he took on the job of smallgoods making. He has also created the line of Matty’s Gourmet Sausages.
